Layers of fresh agave and roasted jalapeos for a balanced signature spicy finish.
The Agave
Only fully mature, 100% Blue Weber agave from both the high and lowlands of the denomination of origin areas. We never use juvenile or low sugar brix content plants.
Additives
Only our all-natural jalapeo extract and a proprietary naturally occurring yeast for fermentation.
Cooking
Slowly steam-roasted for 36 – 54 hours. No diffusers.
Extraction
Molino Crushed.
Fermentation
Slow fermentation with a proprietary naturally occurring yeast for 48 – 60 hours to maintain a full-bodied agave flavor.
Distillation
Only twice distilled slowly in ‘pot-stills’ to maintain the full flavor and integrity of our agave.
