After we harvested Blackberry Alice off of whole fruit blackberries, we selected more barrels of mature Alice that had been in barrels for over a year to age on the spent fruit for over nine months at a ratio of over seven pounds of blackberry per gallon. Death Rattle has a soft rose hue, deeply complex aromas and flavors of blackberry preserves, oak and fruit tannin, with a prickly, medium-high acidity and carbonation.
