Mezcal Barrel-Aged Wheat-Wine Ale with Agave Syrup
Hola Amigos! Inspired by the Mexican kitchen staple, piloncillo, this agave-fueled treat is sure to become a fast favorite. We started with a base wheat-wine ale, feeding it agave during fermentation to infuse a slightly floral sweetness. We then aged it in choice mezcal barrels for 12 months, resulting in this subtly smoky ale with floral, earthy, and caramel notes.
