Palalma is the export brand for Almamezcalera, the bottling label from Mexico Citys notorious Indiana Jones of Agave, Erick Rodriguez. Equal parts historian and adventurer, Erick travels to remote production sites all over Mexico sourcing unique agave distillates. Deeply committed to local traditions, Ericks collaborators are all bona fide local legends in their own right. Working with just a single mezcalero per state, including several states (such as Nuevo Len and Sonora) not currently acknowledged under the Mezcal , Erick bottles tiny batches of truly thrilling, uncertified aguardiente de agave.

Made by maestro mezcaleros Maria Perez and her son Jesus Pedraza Perez, this Cupreata is produced in Michoacn, Mexico from 100% Penca Ancha (A. cupreata). Cooked in a conical earthen oven and milled by hand with axe, it is then fermented in a cubical masonry pit with 1015 liters pulque per batch. Distilled twice using a hybrid Filipino style copper pot and wooden tree trunk still, the spirit has a compelling combination of notes including basil leaf, canned pineapple, nopal cactus, blue cheese, green peppercorn, green cardamom, fennel, and diesel/petrol.
